Weeknight Pad Thai


Ingredients:

  • 1 protein of choice (chicken, shrimp, tofu etc)

  • 2 tbsp vegetable oil

  • 1/4 cup packed brown sugar

  • 1/4 cup soy sauce

  • 2 tbsp rice vinegar

  • 1 tbsp lime juice

  • 1 tbsp fish sauce

  • 2 cloves garlic

  • 1/2 cup green onions, chopped finely

  • 1/2 cup unsalted peanuts, chopped

  • sriracha and sesame seeds (optional)

Directions:

  1. Cook rice noodles according to package directions.

  2. In a separate bowl, Mix together brown sugar, soy sauce, rice vinegar, lime juice and fish sauce. Set aside.

  3. While noodles are cooking, heat oil in a pan over medium-high heat. Add protein of your choice and saute until cooked fully.

  4. In the last minute of cooking add garlic and green onions.

  5. Toss everything together and cook 1 - 2 minutes. Noodles will absorb sauce.

  6. Serve immediately topped with more green onions, peanuts and sriracha!
