Ingredients:
1 protein of choice (chicken, shrimp, tofu etc)
2 tbsp vegetable oil
1/4 cup packed brown sugar
1/4 cup soy sauce
2 tbsp rice vinegar
1 tbsp lime juice
1 tbsp fish sauce
2 cloves garlic
1/2 cup green onions, chopped finely
1/2 cup unsalted peanuts, chopped
sriracha and sesame seeds (optional)
Directions:
Cook rice noodles according to package directions.
In a separate bowl, Mix together brown sugar, soy sauce, rice vinegar, lime juice and fish sauce. Set aside.
While noodles are cooking, heat oil in a pan over medium-high heat. Add protein of your choice and saute until cooked fully.
In the last minute of cooking add garlic and green onions.
Toss everything together and cook 1 - 2 minutes. Noodles will absorb sauce.
Serve immediately topped with more green onions, peanuts and sriracha!
