Ramen

As easy (And delicious) as the 30 cent packs of instant ramen are, this mouthwatering broth will have you wanting to put in the extra time.

Ingredients:

1 carrot peeled and chopped

2 boxes low sodium chicken broth (or vegetable broth)

2 tbsp soya sauce (or to taste)

2 cloves garlic

1-2 tsp grated ginger root (or finely minced)

10-12 black peppercorns

Pinch of salt

1 onion

2-3 green onions onions

Red pepper flakes

Bok choy

Dried Mushrooms (3-4)

Mushroom seasoning (see below photo*)

1-2 packages fresh ramen or udon noodles (usually found in refrigerated section)

*This item can be found at most asian or international food markets


Method:

Cut the white stalks from the green onions and add to pot.Save the green tops for the final product. Chop half the yellow onion and half the bok choy and add to pot. (The broth will be strained prior to serving.) Add remaining ingredients to pot including boxed broth. Simmer for minimum 1 hour or to taste. Strain And set aside


Add remaining diced onion and bok choy to empty pot with 1 tbsp neutral oil (canola or vegetable) and about 1 tsp sesame oil to taste. Cook over medium heat until soft. Add strained broth liquid back to pot with cooked onions and return to high heat. Bring to boil. Once rolling, add noodles and cook. Serve With remaining green onions (finely sliced), sesame seeds and sriracha! Enjoy!

EDIT: Forgot to add soya sauce to the list of ingredients when initially posted. Add to broth, and feel free to add more at the end to taste
