Loaded Blueberry Oatmeal Muffins


Yields: 12 large muffins


Ingredients:


  • 1 cup white flour

  • 1/2 cup whole wheat flour

  • 3/4 cup sugar

  • 1/2 tsp salt

  • 2 tsp baking powder

  • 1/2 tbsp cinnamon

  • 1/2 cup old fashioned oats

  • 1 egg

  • 1/3 cup vegetable oil

  • 1/3 cup almond milk

  • 1 cup fresh or frozen blueberries


Directions:


  1. preheat oven to 400 degrees

  2. mix wet and dry ingredients in separate mixing bowls

  3. combine all wet and dry ingredients, batter will be thick

  4. line muffin tray and scoop batter evenly into each liner

  5. bake muffins for 20-25 minutes until fully cooked

  6. allow muffins to cool... and enjoy!
