If you’re sitting at work and have the sudden realization you forgot to take chicken out of the freezer, this recipe is for you! Simple ingredients you probably already have in your cupboard, frozen chicken, an instant pot and you’re off to the races!
Servings: 2 if you’re HANGRY
Ingredients:
2 tsp. Toasted sesame oil
3 tsp. Minced garlic
4 frozen boneless skinless chicken breasts
2 tbsp. Low sodium soy sauce
2 tbsp. Rice vinegar (or Chinese cooking wine)
1 carton chicken broth (or to cover ingredients. Approximately 900 ml)
Method:
Add all ingredients to instant pot and set to High Pressure for 6 minutes. Allow natural release. This will take approximately 15-20 minutes when using frozen chicken.
Optional: add broth to sauce pot and thicken with cornstarch slurry (1 part cornstarch to cold water)
Service with rice or noodles. In the photo I used 0 calorie shirataki noodles (also known as Miracle Noodle). Cooked in remaining broth for a few minutes.
