Asian Inspired Noodles

Quick, tasty noodles that will beat that craving for take-out (but with pantry staples). And they’re ready in 15 minutes!
Ingredients
1/2 red Onion, sliced
2 cups bok choy sliced
1 carrot, peeled and thinly sliced
2 cloves garlic, minced
1 tbsp neutral oil (canola, vegetable, corn etc.)
1 tsp sesame oil
Sauce
1 tbsp neutral oil (canola, vegetable, corn etc.)
1/2 tsp sesame oil
1 tbsp rice vinegar
1 tbsp sriracha / hot sauce of choice (or to taste)
1 tbsp dried chives
1 tbsp brown sugar
pepper
2-3 tbsp soya sauce
1 lime
1/4 tsp Fish sauce (optional)
Method
Heat 1 tbsp oil with 1/2 tsp sesame oil in a hot pan or wok. Boil salted water for noodles at the same time. Add veggies to pan and stir frequently to prevent burning.
Meanwhile, in a small bowl, add remaining sauce ingredients and whisk.
Once veggies are starting to caramelize, but still have a crunch (Approximately 5 minutes) add sauce and allow to thicken. Add al dente noodles and continue to cook 2-3 minutes. voila! Simple as that.
Top with sesame seeds and an extra squeeze of lime! For a little extra something something, add everything but the bagel seasoning.
